Ginger Cookies
2 c sugar
1 1/2 c butter, softened
1/2 c molasses
2 eggs
4 1/2 c flour
3 t baking soda
1/2 t salt
2 t cinnamon
1 t ground cloves
1 t ground ginger
1/2 t nutmeg
Sugar
In large bowl, beat sugar, butter, molasses and eggs until light and fluffy. Stir in flour, baking soda, salt, cinnamon, cloves, ginger and nutmeg. mix well. Cover with plastic wrap and refrigerate for 1 hour.
Heat oven to 350 degrees. Shape dough into 1 inch balls. Roll in sugar and place 2 inches apart on ungreased cookie sheets. Bake for 8 to 12 minutes until set. Cookies will puff up and flatten during baking. Cool 1 minute and remove from cookie sheets. Makes about 4 dozen cookies.
