Apricot Salsa

Fresh apricots, chopped
4 oz red onion
1 oz olive oil
1 oz cilantro, chopped
1 oz lime juice
1 oz lemon juice
2 t wine vinegar
1 chopped jalapeno pepper
1/2 t lime zest
1/2 t ground cumin
1/2 t ground pepper
salt to taste

Combine all ingredients in a bowl and stir gently. Cover and refrigerate until served.
